Instructions
Wash produce before use
1
Cook the orzo
While the water heats and the orzo cooks, prepare the vegetables.
2
Prep and cook the vegetables
- Cut the zucchini in half lengthwise, then crosswise into ½-inch-thick half-moons.
- Peel and coarsely chop the shallots.
- Cut the tomatoes in half.
- Coarsely chop the olives, checking for any pits.
- Cut the lemon into wedges for garnish.
3
Cook the chicken
- Pat the chicken dry with a paper towel; season generously with salt and pepper.
While the chicken rests, finish the salad.
4
Finish the orzo salad
In the same pan used for the chicken, stir in ¼ cup white wine (from your pantry) or the reserved pasta cooking water and bring to a boil, scraping up any browned bits from the bottom of the pan. Stir in the orzo and vegetables and cook until warmed through and the sauce is thickened, 1 to 2 minutes. Remove from the heat, crumble in the feta, stir, and season to taste with salt and pepper.
