What’s the Deal with Cauliflower Rice?

Enter cauliflower rice, the low carb, gluten free, paleo friendly stand-in for the globe’s most popular grain. Finely chopped granules of cauliflower are also a good source of protein and vitamins C, K, and B6. They also have a more distinctive flavor than plain rice that’s still subtle enough to play well with a range of foods.
